How To Prepare And Cook Beef Short Ribs

How to prepare and cook beef short ribs on a low and slow BBQ

Equipment required

  • Sharp knife for trimming (preferably flexible blade) (I use a fillet knife)
  • Paper towel
  • Fork
  • Scissors
  • Mustard
  • Seasoning rubs
  • Chopping board
  • Slicing knife / chefs knife
  • Eski
  • Aluminium foil or pink butchers paper
  • Beef stock

Step 1

Using scissors or a sharp knife, remove ribs from pack

Step 2

Using sharp knife angled up remove the fat and membrane from the top of the ribs

Step 3

Flip the ribs over so they are meat side down on the chopping board

Step 4

Using a fork, lift off the corner of the top membrane layer of the back of the ribs. Once they start to lift, use a piece of paper towel to tear from the back of the ribs

Step 5

With a sharp knife, put a single cut not to deep in between the bones of the ribs

Step 6

Apply mustard and rub into meat. Top and all 4 sides

Step 7

Apply first layer of rub top and 4 sides (there is no need to rub on the bone side)

Step 8

Add any additional layers of rub

Step 9

Put ribs on cooking rack of preheated smoker (250-275 f is ideal)

Step 10

Now is time to decide if you are going to wrap or boat

If you are going to boat

After 4 hours sit ribs in foil tray and add liquid of your choice

(Try different things I use beef stock and beer is a good one as well)

This is the time to also cover if you want to.

If you want to wrap

Use a double layer of either foil or pink butchers paper.

Put meat in a central part of the pre cut foil or paper.

Starting from the outside, fold from the left and working in a clockwise direction fold the foil or paper over the ribs until the whole rack is covered.

Step 11

Once the ribs reach 180f internal temperature unwrap or uncover.

This will allow the bark to reform

Step 12

Cook until the ribs reach 205-207f or they probe like butter between the rib bones.

Step 13

Cover in foil and a tea towel and put in an eski to keep warm.

This is known as resting and should be done for at least 45 minutes

Step 14

Time to serve and enjoy

Using a strong blade like a slicer or a cooks knife, slice the ribs into individual portions.

Serve whilst still warm and enjoy
