Looking after your knives!

So, you have invested in a quality knife or you have been given a good knife or even a set.
Like any good tool it’s important to look after them so you’re not let down when you need them most.
Most people are overwhelmed or confused by using wet or oil stones. Victorinox have taken the hassle out of maintaining your knives.
With just 3 easy steps you can keep your knives razor sharp so they will trim, bone and slice through any raw or cooked product!
Firstly you need the Victorinox 2 stage sharpener, see picture below.
- In a pulling motion towards you set the sharpener to setting number one, pull the knife through 5 times with downward force and 5 times without downward pressure.
- Move to setting number 2 on the sharpener, again pull through 5 times with pressure and 5 times without pressure.

- Using a diamond sharpening steel, stand the steel on its point facing down, and slide the edge of the knife down and towards you at the same time. Swap sides of the edge after 10 times, once complete, wash under warm running water and dry with clean paper towel.

Maintaining the edge on your knives is extremely important to give you the best quality finished product.
