How to Choose the Best Cuts for Your Next BBQ

Whether you’re feeding a crowd or firing up the grill for two, the cut you choose can make or break the meal. Here’s a simple guide to help you pick—and use—what we sell.
Chicken
- Breast (skin on or off) – Lean and versatile. Great for grilling, slicing for salads, or marinating. Skin on adds flavour and helps keep it moist.
- Thigh fillets – More forgiving than breast and packed with flavour. Ideal for skewers, stir-fries, and direct grilling.
- Wings & drumettes – Perfect for finger food and parties. Cook hot and fast; they’re done when the skin is crisp and the meat pulls easily.
- Whole chicken – Best for slow, indirect heat (or spatchcocked for quicker, even cooking). Leftovers are great for sandwiches and salads.
Beef
- Steaks and roasting cuts – Match thickness to your method: thinner for fast grilling, thicker for reverse sear or low-and-slow. Let quality beef come to room temperature before cooking and rest after.
- Mince – Burgers, kebabs, and meatballs. Choose the lean ratio that suits you; a bit of fat (e.g. 80/20) gives juicier burgers.
Lamb
- Lamb leg or shoulder – Suits slow roasting or low-and-slow on the BBQ. Shoulder is richer; leg is a bit leaner and slices neatly.
- Chops and cutlets – Quick to cook. Season well and grill over high heat; serve pink for the best flavour.
Smallgoods
- Sausages (BBQ, chorizo, beef & burgundy, lamb & mint) – Our range is made to be cooked on the grill. Prick or don’t prick depending on how you like the casing—either way, cook over medium heat so they don’t burst.
- Other smallgoods – Follow pack instructions; many are ready to heat and serve as part of a spread.
Quick tips
- Weight-based products – You choose the size (e.g. 6 kg, 12 kg); we pack to that and price by actual weight so you pay for what you get.
- Per-piece products – Fixed price per item; good when you need a set number of portions.
